Cheddar Chicken Noodles and Seasoned Green Beans

This recipe has become one of my family’s favorites. Not only does it please my picky four-year-old son but it also pleases my would-rather-be-eating-pizza husband. Pair this casserole with a side of seasoned green beans and dinner rolls for a tasty and healthy meal.

Cheddar Chicken Noodles

Ingredients:

2 cups cubed cooked chicken (can use canned chicken)
2 cups (8 ounces) shredded Cheddar cheese
7 ounces elbow noodles or other shape
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup milk
¼ tsp salt
¼ tsp pepper

Directions:

1. Cook noodles according to package directions.

2. Meanwhile, in a large bowl, combine the chicken, half of the cheese, cream of chicken soup, milk, salt, and pepper.

3. Drain noodles and add to the chicken mixture. Toss to coat.

4. Transfer chicken and noodle mixture to a greased 13-in. x 9-in. x 2-in. baking dish.

5. Top with remaining cheese.

6. Bake uncovered at 350 for 20-25 minutes.

Seasoned Green Beans

Ingredients:

Fresh or frozen green beans
Dry Good Seasons Italian dressing

Directions:

1. Cook frozen or fresh green beans.

2. Drain liquid off of green beans.

3. Sprinkle desired amount of dressing mix over green beans and stir to combine.

4. Let green beans stand a few minutes before serving.

While the Cheddar Chicken Noodle recipe calls for shredded cheddar cheese, this dish is also good with some of the great cheese mixtures that are in the grocery stores such as Colby and Monterey Jack. Don’t be afraid to experiment with the cheese until you find the perfect taste that your family enjoys. I regularly change the types of cheese to create a different taste and my family doesn’t seem to mind.

The Cheddar Chicken Noodle recipe may also be doubled so that you will have plenty for leftovers the next day. For leftovers, spoon out the desired amount on a microwave safe plate and heat up until warm. To complete the meal, whip up a salad, bake some rolls, and you have another great tasting family meal!
